Honey Bears

My mother used to make

Honey Bears –

to wish you love –

even as we start the new, it feels good to be connected to the love of the past.
new years bear love

so i made them for You –

and yes, i ate them too!

Recipe for Mommie’s Honey Bears:

based on Betsey McCalls Gingerbread 

mix/sift/wisk together:

2 1/2 cups all purpose wheat flour 

     (I used King Arthur all purpose, because she always did –

     this recipe is not GF, and i was not able to translate it in the past)

1 tsp. ginger

1 tsp. nutmeg

1 tsp cardamon ( which she always omitted so i never remember what this tastes like!)

1/2 tsp salt

2 tsp baking POWDER

cream together:

1/2 cup sugar

1/4 cup butter

1/4 cup shortening ( keeps the biskits soft and pliable for molding)

add:

1 egg from a happy hen

1/2 cup of local honey

mix well til smooth dough

divide in half and let rest in the fridge overnight

form biskits by rolling balls – have fun – all need to be the same height or they will not bake evenly – they are like a cross between a cookie and a biscuit 

bake at 350 for 10 or so minutes til golden

share them!
